A Tasty Lent Lunch Discovery (That’s Not Fish!)

On Friday I stopped by a (new-to-me) local restaurant for a quick vegetarian lunch. Since we can’t have meat on Fridays during Lent, I was looking for a meal that was filling and flavorful.

And NOT fish! 😂

I ordered the Puerto Rican rice and beans with a veggie empanada. It was SO GOOD! I can’t wait to go back and try some of their other dishes.

And of course, this delicious lunch has now inspired me to find the recipes for empanadas and Puerto Rican rice and beans.

Whenever I try delicious food at restaurants, I always want to see if I can recreate the meal at home. 😆

It’s just like when we went to the Chinese New Year event and I tried sesame seed balls.

I loved them so much that I found a recipe and went out and bought the ingredients to make it. Lol

Zaya loved the huge plants we saw in the restaurant. 🪴 She couldn’t believe how big the leaves were. She said to me, “The leaves are bigger than my head, Mama!”

I told her I’d love to have a plant that big in our house. 😍

I know a lot of people like to eat fish on Fridays during Lent, but I don’t particularly care for fish.

Except for salmon. I do love salmon.

But let’s be real—salmon is super pricey! So, I’ve been trying to find other yummy food options for Lent.

I’m definitely adding veggie empanadas and Puerto Rican rice and beans to my list of meal ideas for Lent!
